A buddy of mine thinks he has the best jerky so this year he started a contest for it and started his first annual "JERK OFF CONTEST"
As a side note some find it helpful to take a piece of hardwood slab and router a section of the center out about 1/8" deep or how ever thick you wish to slice it. Make the indent large enough so the meat will lay down into it and the area that wasn't routered can be used as a knife guide for slicing.
