i know nothing of this disease...
but if you have "Gamey" deer? thats usually the fault of the person who killed/cleaned it.
if you wounded it & it ran & got those fear hormones pumping thru it? or maybe you didnt cut those off the legs? or you busted the guts in it? YUP its probably gonna be gamey.
lots of us have been taught different ways to cut/gut/clean/skin & no way is the only way...
it just seems that if you can get a clean kill where it drops right there with no run, no chase.... that it has always made a difference for me. its why when Demon or me are in the woods we always head hunted.
they dropped right there or we missed. wasnt any running or chasing because we wounded something or miles of blood trails. then we cut those off the legs first & gutted em right where they were.. THEN we took em home to hose & micro clean out, skin, hose again & pack with ice while they hung.
thats just how we were taught.
seems to have eliminated all the gamey taste .
ive got friends & co workers who soak the meat in milk or vinegar before cooking & so on... whatever works.
one of my favorites was slow cooking over charcoal with nothing but some garlic salt & onion powder.. slow cooking with lots of flipping.. OMG that is some good stuff if you have time.
1st time i ever fixed venison for my girls i did it that way. they have loved it ever since. now days most of the time i take the short cut & gas grill it or even do a pan fry. simple cook seems to work the best.
